First Intensive Training Completed at Pag Pizza Academy

Grateful and proud. That is the best way to describe how we feel after completing the first intensive training at Pag Pizza Academy. Over the past days, we worked with a group of participants who brought energy, focus, and trust into every part of the program, creating an atmosphere closer to a real kitchen than a classroom.

This program was designed as a practical, hands-on experience for people who want to understand pizza at a deeper level. From dough preparation and fermentation to shaping, baking, and workflow, every step was built around real processes used in professional kitchens.

The training was led by Mario Markušić, the lead instructor of the program, who guided participants through every stage of pizza-making with precision and clarity.

Working with experienced professionals in a structured environment allowed participants to understand not only how to make pizza, but how to work consistently under real conditions. Small details, repetition, and discipline were a constant focus throughout the training.

All ingredients and materials used during the program were provided in collaboration with Mia Familia, ensuring that participants worked with high-quality products from the start and understood the importance of raw materials in the final result.

One of the most important moments of the training came on the final day, when participants entered a live service simulation. Guests from NK Pag joined as part of the experience, creating a real service environment where timing, coordination, and teamwork became just as important as technique.

Alongside the technical work, participants also developed their own ideas. As part of the program, they created a special Pag-inspired pizza that will be presented at the upcoming Kaloka Festival, connecting what they learned with the identity of the island.

What makes this first training especially meaningful is what happened immediately after. All participants are already continuing their journey in professional kitchens this week. That is the strongest confirmation that knowledge, effort, and the right environment lead to real opportunities.
